If you checked out my last Bake with Me!, then you probably know that I’m a stress baker. Though my finals are over, I still had a little bit of residual stress in need of being worked out of my body and transferred into some warm muffins to pair with my copy of Harry Potter and the Goblet of Fire and a mug of Bigelow Vanilla Chai. So I did just that!
For my muffin recipe, I turned to the place that taught me how to properly chop my vegetables and spot a quality diner, drive-in, or dive: Food Network. I wanted to take a break from recipes that made wild claims, so I chose this one that was simply called “Banana Muffins.” I kind of like it. As long as your goods turn out in a semi muffin shape and you actually added the bananas, the recipe will have accomplished its goals.
This recipe was a little more specific than I’m used to. There was some changing of oven temperatures, some pouring liquids into a well, and absolutely no butter – honestly, that last one had me shook. But I think I followed it to a tee, except for the part where it said, “Do not overmix the batter or your muffins will come out dense.” I definitely over mixed, and my muffins definitely came out dense. What can I say? I’m an over enthusiastic mixer, and at least my muffins don’t drop crumbs everywhere!
Overall, they’re pretty alright and look a lot like the Food Network photo. My roommates and I also did a taste test to see whether my novice-made muffins were better than the ones from the Kroger Bakery. I ended up with 1 vote for Kroger and 2 for me, which really just came down to the desired banana intensity, whether or not the taster actually liked cinnamon, and muffin density preference!
I also made these bonus muffins using this recipe from The Girl Who Ate Everything and the topping from Add a Pinch! These ones were less dense and more crumbly. They also look kind of sad, but I actually prefer the flavor of these to my banana muffins. Of course, I was the only one in that boat, because one of my roommates was not a huge fan and the other refused to even try it. More for me, I guess!
